    anytime chocolate fudge balls

    Chocolate Covered Katie cookbook (recipes that are secretly good for you) came in handy for healthy snacks this week! Katie Higgins included a recipe titled as above, and notes with truth that It’s impossible to eat just one of these simple fudge balls!

    Gluten-Free, No added sugar and no refrigeration required!

    Here’s the recipe:

    • 3/4 cup pitted dates
    • 1/2 cup raw pecans
    • 2 tablespoons cacao powder or unsweetened cocoa powder
    • 2 tablespoons shredded coconut
    • 1/2 teaspoon pure vanilla extract
    • 1/16 teaspoon salt (a pinch, perhaps?!)
    • 1 handful mini chocolate chips, optional

    Combine all ingredients in a high-quality food processor and process until a fine crumble forms (you can also use a magic bullet or blender). If the mixture is too dry, add up to 1 tablespoon water.

    Transfer the dough to a gallon-sized resealable plastic bag and smush into a ball. Open the bag, break off pieces of dough, and roll into balls.

    Store in a covered container at room temperature for up to 3 days, refrigerate for up to 2 weeks, or freeze for up to 2 months.


    These are sooo delicious! Per fudge ball:

    Calories: 45

    Fibre: 2 grams

    Protein: 1 gram

    Fat: 2 grams

    Carbs: 8 grams

    *makes 10-14 balls
