    Baby Gourmet: Squash with Lentils

    This recipe uses split red lentils which are a good source of protein and provide iron which baby needs for brain development, particularly between 6 months and 2 years of age.


    1/2 cup finely chopped onion

    2 medium carrots, peeled and chopped

    2 tablespoons chopped celery

    1 tablespoon butter

    1/4 cup split red lentils

    1 small butternut squash (8 ounces), peeled and chopped

    1 3/4 cups chicken stock or water

    Saute the onion, carrots, and celery in the butter for about 5 minutes or until softened.



    Add the lentils and squash and pour in the stock or water.

    Bring to a boil, turn down the heat and simmer, covered, for 20 minutes.  Puree in a blender.
