    Simple Refreshing Farro Salad


    I could eat this salad ALL DAY!  This is Natalie’s version of the Duenas girls’ delicious Mediterranean salad. It’s great as a side dish or an entire meal in itself. You can add chicken breast or for vegetarians, chick peas would taste yummy in this farro salad.


    • 2 cups of farro, cooked al dente
    • 1 handful of cherry tomatoes, sliced in half
    • 1 handful of mint, chopped
    • 1 handful of basil, torn
    • 1 handful of parsley, chopped
    • 1 handful of pistachios, chopped
    • 4 radish, sliced thin
    • 1 cup of cubed butternut squash, steamed or roasted
    • 1 beet, steamed cubed
    • Olive oil and squeezed lemon, for dressing


    Combine all ingredients in a large bowl, season with salt and freshly cracked black pepper, dress with lemon juice and olive oil.


    SO EASY!

    Serves 4.
